Menu Plan Monday August 3




School starts next week so I am now officially back to work. The summer was great but went by entirely too fast. I am so glad I plan menus to help with the "what is for dinner." It will especially be helpful as I head back to work. Hope you enjoy it!

Breakfast
M - Scrambled eggs, toast
T - Whole wheat waffles
W - cereal
Th - Egg McMuffins(homemade)
F - No-oil muffins with blueberries
S - cereal
S - Omelets

Dinner
M - Cheese stuffed shells
T - Taco Soup (recipe below)
W - Loaded baked potatoes
Th - Out (Meet the teacher for me)
F - Italian herb chicken
S - Chicken spiral salad
S - Italian burgers (recipe below)

Taco Soup
1 lb extra lean ground beef
1/2 c. onion, diced
1 pkg reducedd sopdium taco seasoning
1 pkg ranch dressing mix
2 cans black beans, drained
1 can corn, drained
1 14 ozz can rotel

Brown ground beef and onions in a large pot.
Add remaining ingredients and mix well.
Bring to a boil, reduce heat, and simmer for 30 minutes.
Garnish with reduced fat cheese and light sour cream.

Italian Burgers
1/2 c onion, diced
1/3 c fat free italian dressing
1 1/2 lb extra lean ground eef
6 whole wheat buns

Combine all ingredients and mix well. Divide into 6 burgers and cook.
