All in a day off

I was quite busy today on my extra day off.  The pictures outline most of my day.

I also cleaned out the pantry, washed two kids bed sheets, and made dinner.  What a productive day!

Goals-Summer re-visit

I go back to work tomorrow for the 2012-2013 school year.  I am starting a new adventure in a new position, at a new school.  I am really excited.  It is hard to believe my summer is over, but it was great.  I spent quality time with the kids, got a lot done around my house, and relaxed.  I thought it would be a good time to revisit my yearly goals.  I tend to neglect this blog more than I used to, I guess I am just too busy. 

1.  Exercise 3 times a week.  That is not at all what is should be, but it is realistic!
I started Jillian Michael's 30 day shred.  I am hoping to get on the elliptical three times a week before work. 
2.  Go on actual date nights with my husband once a month.  Seriously, anyone who has kids and says that they don't need these are full of it!
Nope, still not happening...
3.  On a different note, go on "me" time once a month that does not include my nails or hair!
Well, my me time basically consists of grocery shopping.  Ahh, the life of a mom!
4.  Every three months, have a fun day with each child, separately!
Still working on this. 
5.  Pay off our truck this year!
Can I get a WOO-HOO!!  Paid it off last ,month.  But, go figure that my husband's air in his truck went out.  His truck is 14 years old, so we are deciding what to do.  Can't catch a break!
6.  Pay off our last credit card!
Getting closer.  Maybe the solution is me staying away from Kohl's.....nah!!
7.  Find another job.  Yup, that is what I said.....lots of details to work out, but the time has come to look on the other side of the rainbow!
Can I get another WOO-HOO!! I am going to be an Instructional Growth Teacher for another school in my district.  I will be working closely with new teachers and I can not be more happy!
8.  Re-do our laundry room.
I bought decor and new curtains two weeks ago.  Hubby installed shelving yesterday, primed it today, and now we are just waiting on paint. 
9.  Organize old pictures in frames and boxes.  You know, the old light oak that used to be in style....time to repaint and re-hang.
I almost finished this project.  All frames have been re-painted and they turned out great.  I bought a stencil for the wall and I am ready to hang pictures around it.  Hopefully get that done this week.
10.  Try 2 new recipes a month.  I have a ton "pinned" on Pinterest, let's get cookin!
I would claim success on this one.  Love me some Pinterest!!
11.  Re-decorate youngest daughter's room to a "big girl room"   AHHH!
I have decided to wait on this.  Not sure how I want to decorate yet.
12.  Save $100.00 a month into savings!
Yes, but may be gone if/when we decide to fix hubby's truck.
13. Go to therapy - are you still reading this......
Still want/need to do this.  Who couldn't use someone they don't know to vent to?  :)
14.  Plant a container garden!
I did more than a container garden.  They started off this way, but then my hubby built an above ground system for me.  I planted strawberries, watermelon, cantaloupe, three types of peppers, jalapenos, cucumbers, zucchini, and tomatoes.  I have not gotten as much as I thought I was going to.  I have gotten about 10 tomatoes, one orange pepper, and many strawberries.  My first zucchini is sprouting right now.  Hoping for more luck with fall vegetables.  It is hard to grow things when it is 110 in the summer!
15.  Start reading my Bible!!!!!
Let's just say that I need to pray about his.....
16.  Finish redecorating my room!  I just started re-finishing our mismatched furniture.  Fun and turning out great so far!

Well, after re-visiting this I don't feel like I got a.lot done, even though I know I have so far this year.  I guess that is the life of a busy, working mom of three, four if you include my husband!  I did learn how to "can" things this summer though, and I enjoy that.

Fill it up!

I go back to work in less than three weeks.  I have been wanting to fill up my freezer with meals so that I don't hear that most wonderful question, "What's for dinner?"  after I get home from working all day!  I have been doing OAMC(Once a Month Cooking) for about four years.  I even cook with my family where we cook 120 meals in a day for 5 families. 
After spending a few hours planning the meals, another few hours shopping, I was ready to go.  I have been doing this for about four years.  This time I wanted as many "freezer to slow cooker" meals as I could.  I also wanted to focus on healthy meals.  This is what I came up with.  If I can link it to a website, I will.  I also use four cookbooks that are specific to OAMC, though this time I didn't.

Chicken and Broccoli Bake x 2 from Once a Month Mom.  I love her website.  She has many types of OAMC menus to meet all sorts of dietary needs.

Salsa Chicken x 2 from Six Cents

Cumin-Cinnamon Beef Stew x 2 from Mama and Baby Love.  She just put out a cookbook, which I ordered.  This recipe is exclusively in her cookbook.  There are many others though on her website for free.
Taco Soup from me! I brown ground turkey, and dump it in a Ziploc with a cup of black beans, a cup of corn, a can of rotel, a can of diced chiles, and cumin.  I also put in a can of chicken broth.  The day I cook it, I will put another can of broth.  We like to put cheese, chives, and sour cream on the finshed project.  You can search google and get tons of variations of this.  I just throw in what I know we like.

Ginger Cranberry Pork Roast x 2 from Mama and Baby Love.  Excited to try this!

Summer Veggie Soup from Mama and Baby Love.  This is another one in her cookbook.
Southwest Rice and Beans x 2 from Once a Month Mom.  We have had this many times before.  We like it alone, in a tortilla, or with chips.
Roasted Vegetable Quinoa from Once a Month Mom.  This smelled wonderful!  Can't wait to try it.
Mexican Baked Penne from At Home woith Kim.  This time I left out the ground beef.  I am trying to feed my family less meat.  We have had this many times before with the meat and we love it.  I am curious to see of we still enjoy it as much, but I am not sure why we wouldn't!
Stuffed Peppers from me!  You can search to find a recipe you like.  I made mine with brown rice, black beans, tomato sauce, cumin, and corn.

Now, shopping details.  I shopped sales, did ad match at Wal-Mart, and I also bought reduced meat.  I am on a tight bnudget for the summer.  I spent a total of $120.00 to make all of these, plus breakfast burritos, which I need to make tomorrow.  That averages to $7.00 a meal, and $1.40 per person for my family of five.  You can't beat that.  On top of that, I feel that for the majority of these, they are healthy. 

If you do this a big suggestion I have is to buy Ziploc brand freezer bags.  They cost more, but are well worth it!

10 goals for this week

Last week I made 10 goals.  Here is how I did.

I was browsing my favorites bar and came across Money Saving Mom. I love her website and she always has great freezer meals. Today she posted about her 10 goals for the week. While I need to revisit the goals I wrote at the beginning of the year, I thought this would be easier right now. Here are my 10 goals for the week.

Home
1. Clean out downstairs closet.   Done!
2. Clean out kitchen cabinets and get rid of what I don't use. Not yet.
3. Organize kids bookshelf. Another not yet!
4. Go through youngest child's room. Donate, trash, and store piles a must! A big woo hoo for this one!  I also reorganized and moved her furniture, looks so much better!

5. Exercise three times before the 22nd! Eliptical once for 20 minutes.  Does swimming count? 
6. Drink 64 ounces of water each day. Most days....
7. Update blog with pictures and revisit goals from March. Dang it, not done yet!
8. Schedule Dr appointment.Wow, I didn't do so well on my goals.....

Family
9. Take the kids to the library and then ice cream. (They have been asking for 3 weeks for ice cream!) Yeppers!
10. Plan a date night! Ahh, no!

What are your goals?  Either I set too high of expectations on myself or I stink!  I am keeping the rest of these for this week that I did not get to.  Here's hoping I can cross them all off!

Goals-revisited and spring break

It's the last day of spring break and my heart is breaking.  I. Do. Not. Want. To . Go. Back. To. Work.
I have helped a friend with OAMC, cleaned and organized two closets, shredded two years worth of paperwork, cleaned out my 7-year olds room, have a huge pile of items to donate, put 13 years worth of 8x10, 11x14, and 5x7 pictures of the kids out of frames and into a scrapbook, organized my pantry-again, planted a small container garden, and today I will do a craft and hopefully update my ipod.  I love the sense of accomplishment I have during breaks!   I thought now would be a good time to update my goals I made in January.

1. Exercise 3 times a week. That is not at all what is should be, but it is realistic!
It ranges from 1-2.  However, I did complete a half marathon in January and tomorrow I will be completing a 5k with my 11 year old.
2. Go on actual date nights with my husband once a month. Seriously, anyone who has kids and says that they don't need these are full of it!
We have not done this.
3. On a different note, go on "me" time once a month that does not include my nails or hair!
I have gotten my nails done, but other than that I enjoy grocery shopping by myself.  HaHa!
4. Every three months, have a fun day with each child, separately!
Last night I took my youngest to have yogurt.  So, I am behind, and it wasn't a "day" but we both enjoyed it.

6. Pay off our last credit card!
Hopefully 2 more payments!
7. Find another job. Yup, that is what I said.....lots of details to work out, but the time has come to look on the other side of the rainbow!
I have reached out to many people I know but nothing yet.  I am waiting for some letters of recommendation and I have started my resume.  I would love to do something from home.  I have something I have wanted to do for a while, but I just need to work out more details.  Would you buy meals already cooked that are frozen to eliminate the
what's for dinner"?  How much would you pay?

Half done, just need to paint and hang the ones I want to hung up.  Oh, wait, I still have thousands of pictures that are 4x6.  I have all year to do this, right??
10. Try 2 new recipes a month. I have a ton "pinned" on Pinterest, let's get cookin!
We have tried new recipes thanks to my OAMC club and I have tried a few on Pinterest.  SO if you follow me on Pinterest, the whole wheat pancakes are blah....but my youngest loves them!

Done!! :)  Still going....

I have started this!  This week we planed zucchini, cucumber, ans watermelon.  We also bought a strawberry plant, tomato plant, and two zucchini that already started to grow.

The furniture looks great, now I just need my husband to hang the decorations and frames I got.  Getting there.

So, overall I think I have a good start to my goals.  I will re-visit them in June!

2012 Goals

January is in full swing and I am feeling the pressure of goals for this year.  I have so much I want to do with my life, with our life as a family of 5!  Here are some thoughts I have as goals for myself.  Let me first say that these are of my opinion.  You do not have to read my blog if you do not want to!  I don't think anyone reads this blog anyway, so if you do read this....let me know!  :)

Okay...so I think that is maybe too many...I am going to keep this as a work in progress.  Here we go 2012, I am ready now!  I will cross off things a they get done and then add things as I feel necessary!  Are you bored yet?  I am off to research container gardens!  Haha!
